Kerry’s new enzymatic sweet baked goods solution increases shelf life to fight food waste

Kerry, an Irish food company introduces a new enzymatic solution for sweet baked products that provides more lasting softness, freshness and moisture sensation throughout their shelf life, also contributing to the reduction of food waste.
Biobake Fresh Rich is a clean label enzyme that acts on starch and allows sweet baked goods with more than 20% sugar to stay fresh longer. This has a strong relevance as sweet baked goods are the most thrown away food category worldwide. Achieving product quality with a longer shelf life could enable a more environmentally sustainable future by reducing the possibility of consumers disposing of bakery products.
Biobake Fresh Rich appears in a highly dissolvable dry format and is neutral in taste. It is suitable for the manufacture of kosher, halal, vegetarian and vegan products.
Furthermore, in new sensory tests, compared to a reference preservation enzyme for 12 weeks, Biobake Fresh Rich significantly exceeded the reference enzyme in both perceived smoothness and moisture.
